Sheet Pan Red Pepper Pasta

Oh sheet, a recipe with vegetables!

Introducing my Sheet Pan Red Pepper Pasta! This savory sauce with a hint of sweetness is the perfect way to add some veggies to your diet. The best part is it takes minimal effort to make (perfect for any new moms out there!!). Throw the veggies on the pan and bake for 30 minutes. Once done, the sauce will be ready to go within 10 minutes.

Ingredients

-1/2 box of pasta
-2 red peppers
-1 onion
EVOO
-6 garlic cloves
-1 box cherry tomatoes, sliced
-1 tablespoon thyme
-1/2 cup of heavy cream
-1/2 cup of parmesan, freshly shredded 
-salt & pepper to taste
-splash of pasta water

Directions

Chop veggies and add to sheet pan. Top with EVOO, salt, pepper and time. Roast for 30 minutes at 400*. Blend the veggies together and add to a pan over medium low heat. Add heavy cream and whisk.

Once pasta is al dente add directly to the pan. Add parmesan with a splash of pasta water. Season with salt as needed. Enjoy!!!
